Raising a Modern Day Knight - Pondering #2

#2 - "What do you love to do with your son?" Today, ask your son what HE loves to do with YOU. Then put it on the calendar and commit to go do that.

Benjamin - "I love to hike with you in Door County."
I do too! We decided that we will be going to Door County this autumn to get in some good hiking - leaving Matt and Rick behind us on the trail, since we hike faster than they do.

Ricky - "I love to be in the kitchen with you."
I love to cook and so does Ricky. Fortunately, we love to be in there together! LOL  I taught him everything I know about baking bread and he has taken off with that. Now we are venturing into the world of gluten-free breads!

Gluten Free Chocolate Cupcakes

What a disaster... at first. I have pictures to share with you, but my camera is dead right now. So, awaiting a good healthy charge, I will post the disasterous photographic evidence later.

I did manage to salvage some of the batter and wonderful little cupcakes came out of the oven!  Just enough to frost and pop in your mouth.  I was so happy I cried. I cannot tell you how much I missed eating cake and cupcakes!

Phyllo Dough For The First Time

I made Apple Strudel! It's pretty yummy, but I think it will be better with a slight drizzle on top.

First unwrap the Phyllo Dough - very thin!!

Then melt the butter and gently coat each Phyllo layer with butter.

I forgot to photograph the apple mixture, but it's in there!
Tightly wrap each layer of apples lengthwise and coat the strudel with more butter!

Bake for 35 min. @ 350 degrees F

End results are yummy!

And so photogenic!

Baking

I'm glad you guys learned to bake bread -- and so are our friends!!! Your bread is fantastic! You make a yummy garlic and cheese bread.

Ben makes a banana bread that is out-of-this-world! He says it's his secret recipe, but I have it too!!

We got started making bread when friends of ours - the people we bought this house from - gave us a loaf of home-made bread when one of us was sick. They eventually showed us how to further our bread making skills by grinding our own wheat berries. We loved this so much - and I loved the cost effectiveness - that we used a tax refund one year and bought a ginding mill machine.

I hope that you take this talent into your own homes and families, further spreading the joy and love of baking to your dear ones.
